Wedge of Manchego cheese with top crust of ground, toasted almonds, and candied orange peel.


1b)  Alta No 10, 10 yr old Tawny Port NV

Pairing: Stilton Fig Tart
Stilton custard with red wine poached figs and shaved extra dark chocolate.

2a)  2021 Quinta da Cardo Reserva White 2021

Pairing: Bacalhau Salad with Potatoes and Olives

Whipped, milk-poached, salted cod. Topped with small cubes of garlic poached potatoes, thinly sliced green olives and parsley.

Pairing: Roast Lamb

Sous vide tender and finished on the grill. Served as a small skewer with chimichurri, crispy shallot, and leaf of fresh rosemary.

3a)  Quinta de Sanjoanne Terroir Mineral 2019

Pairing: Lemon-Garlic Shrimp

Poached in garlic butter and served with a sprinkle of fresh lemon zest, dill and a touch of finely cracked mixed peppercorn.


3b)  Nat Cool Drink Vinho Verde Branco 2023

Pairing: Marinated Octopus with Olive Oil and Parsley
Tender Octopus charred, diced and served as a salad on baguette (think Bruschetta/ceviche)  and dusted with smoked paprika.

Pairing: Stuffed Mushrooms with Iberico Ham and Herbs
Diced ham and herbs roasted in mushrooms. Garnished with crispy breadcrumbs and shaved mancheggo.

Pairing: Grilled Chorizo with Olive Oil and Garlic

Rich, fresh chorizo. Grilled and served with a garlic chip and oregano infused olive oil.
